Whenever it concerns raising a stat, I take the risk, but I usually don't when it involves money.
NOTICE - reading from here on out might be considered a spoiler - far warning is now given.

Depends on the special and what it gives me. Mines I rarely enter. I have my mount and don't feel the small chance of getting a couple of gems is worth the risk of the small chance that my horse will die and I'll have to start over again.
Stonehenge has some massive disads (can take 15% of your xp when it kills you), but the advantages outweigh that. (+10% xp, plus 3-5 charm, plus 2-5 permanent XP, etc.) I will always take that risk because the good things are too awesome.
I don't gamble. I don't like to waste time on that game. It's not a risk thing, but something I don't feel is worth my time as I'm rarely carrying around enough cash to matter.
I'll always play Audrey's game.
I'll do the riddle when I'm not in a hurry. It's not really a gamble to me, though. I get the riddle right about 99% of the time. The rest of the time, I've accidentally typed the answer incorrectly. ;)
I'll almost always try the Smith in the forest. It does depend a bit on when I'll next be upgrading equipment and how many gems I have lying around, though.
That pretty much sums it up. I can't think of any other specials you "gamble" with.

I bve a compulsive gambler, so i gamble on anything I see... so far it has paid off overall despite a few bad experiences.

Stonehenge=Always
Mines=Never
Follow the trail=Never
Audrey=Always
Gem Fairy=Always(not really a risk, but you could end up with only an extra turn to show for giving away a gem)
Gamble=Never
DHT Gambling=Never
Riddles=Always
Smythe=Never
Lead Old Man to Town=Always(costs a turn, but could possibly earn a gem)
I think that's about it.

Stonehenge = always
Mines = never once I learned you can lose your wyvern. even before that I didn't go in if I had more than 10 or so gems on me
Follow the trail = very rarely. mostly if I don't have many turns left and I don't mind dying too much
Audrey = always
Gem Fairy = always
Gamble = never
DHT Gambling = used to, haven't for a month or so now. too slow to make profit
Riddles = allways
Smythe = only if I've maxed my weapon or armor and I know I'll stick with it for a while
Lead Old Man to Town = always
River = sometimes, same as follow the trail, maybe a bit more often
foilwench is not really a gamble but I never seem to give her a gem for some reason... I tend to count on the fairy for skill upgrades...
edit: oh and I hardly ever try to rescue the princess either...

I'll play dice in darkhorse constantly, and rarely ever come out with a loss.
Audrey every time, same with the Faerie. I've allways got gems to spare, even the extra turn I don't mind.
I don't mess with the Smith. No point for me really.
Only seen stonehenge once, got a couple gems, whoo...
I'll allways play the number guessing game, can't go wrong with 50-50 odds.
Not fond of the mines, I have enough gems, and the risk losing my beloved Miridan (read: Phoenix) is not worth it.
Mostly, I'll gamble like mad when it comes to gold.

The odds on the number guessing game are actually better then 64-36 since you can do a partitioning search and eliminate enough cases... so I almost always play the game, and worst case I've got a 50/50 chance at the end if I didn't get it on my first 5 guesses...
Stonehenge can really be annoying with its death or the loss of 5 turns, but the return on the risk can be quite worth it so I'll be wandering amongst the stones there again....
Riddles piss me off sometimes... if I come up with the same idea as the person writing the riddle but guess a different word for it then you fail.... that said, I'll keep playing because I've gotten one of those riddles again and got it right the second time...
Mines I only go into if I'm not worried about my mount (like my character on DragonCat who only has a Stallion), but I'm not going to risk my Wyvern on Central or the Phoenix I'm about to pick up on DragonCat...

I'm like the others in what I "gamble" on, though I am getting to the point now where its just not worth trying to rescue the princess.
The gains are weak, and you risk dying.

Phoenix won't die in the mines on Dragoncat. Don't worry about that one. :) (I made sure the mount *I* prefer was immune. lol )

Mines - never, since I found out my wyvern could die! :shock:
Audrey - almosy always
Riddles - always
"Guess the Number" - rarely
Follow the Path - only if I'm down to my last 1 or 2 FFs
Stonehenge - same as Path
Smiythe - only if I'm a long way from affording new equipment or already have max equip.
Gem Fairy & FoilWench - 50/50 depending on if I have gems & feel I need the possible buffs
Ask Seth to Entertain - every day, but at different times depending on how lucky I feel! (before first FF, middle of day, after all turns are gone - you get it...)
Gamble at Dark Horse - nah.
Rescue the Princess - not unless it's near my last FF.

DragonCat Phoenix's won't die? Yay! I guess I might start going to the mines again...
Edit: I guess I should really have specified I'd start going back to the mines on DragonCat...

NOTE - The Phoenix is immune on dragoncat.net NOT necessarily so on logd.net. There are differences between Central and dragoncat, and that is definitely one of them!

Hmmmm. Me Wyvern on the main always seem to say that it be too big to fit in the mines... never seen it in actual danger.

There's a percent chance that it can go in the mines with you. And then there's a smaller percent chance that it will die if you die.
Its not very likely at all, but it can happen.
It did happen :cry: , if you feel like you are lucky, you can have some more gems :twisted: Sneakabout.
